The soul of Madam Mam's is based on many generations of devotion to Thai culinary excellence. Chatfuang, or "Mam" as she's known by friends, grew up cooking and learning the culinary arts at the side of her grandmother(an acknowledged master of both Royal and family style Thai cuisine)in their Bangkok kitchen. In Thailand, daughters learn to cook from their maternal relatives, so Mam's grandmother learned her skills from her mother and grandmother, and so on, down the line of their ancestry. |
As Mam grew, she quickly gained a solid reputation among her family and friends as a wizard at the stove. She went on to be a restauranteur in Bangkok, and in later years, she wrote culinary critiques for Thai newspapers. Mam's husband "Sap" Apisaksiri brings his own set of credentials to the table, with a long background of customer service in the grocery industry, he garnered a reputation for selling high quality products and providing the best service possible. His grocery management career was followed by years in the Southeast Asian restaurant business locally, as manager and chef.

Mam and Sap had been close friends in high school, and had deep feelings for each other. Sap's shyness and devotion to sports prevented their dating, but even after Sap came to the United States to earn his degree from the University of Texas, they stayed in periodic contact. After many years in the States without travelling back to Thailand, a trip back for a family gathering gave Sap the opportunity to renew contact with Mam. She had just ended a marriage and when the two met up again, their mutual attraction was instantly rekindled. After a brief, but very long distance courtship, they married. Sap brought Mam back to Austin and they immediately made plans to open a Thai restaurant based on the incredible dishes and cooking style of her maternal ancestors.
